8TH Course : second dessert




This was a pleasent surprise, since I made it from scratch , begging it won't be disgusting! and I was so surprised by the subtle tarty kiss of the flavor , the delicate "melt in your mouth" crust and the sophisticated mix of strawberries with goat cheese!

This is a strawberry goat cheese cake served with fresh berry mini salad, mint chiffonade and a really simple sauce of amaretto-honey . I made the crust from scratch; melted one bar of butter and on a ziploc bag crushed a roll of ritz cookies , the strawberries were natural , no paste nor glaze and the goat cheese was plain , the salad of berries was mostly blueberries, raspberries and green grapes just for contrast .

The mint chiffonade is basically stripped mint tossed in delicate lemon zest and lightly tossed with sugar.

The amaretto honey sauce was made by melting the honey and sauteeing with the amaretto , with the heat the alcohol evaporated , so it was only the flavor of cherry , I added a bit of sugar just to make it stick all together .
