7TH COURSE: First Dessert


I love the whole idea of shocking people and make them look at food diferently , I took some of this dessert to my workplace... and 2 out of 3 persons were like "I do not eat raw fish" ... so when I explained them the whole concept , most of them were nicely surprised !


So this is my version of a sushi dessert: Kissushi , wich is a "cutesy" name for kiss of sushi , that does sounds fishy! LOL


So this are rice rolls stuffed with fresh kiwi and strawberries and topped with a homemade raspberry balsamic vinager reduction , berries and "guava pearls.


I boiled rice with sugar and coconut milk in low heat, untill the rice was overdone and sticky , then I rolled up in a sushi matress with the kiwi and strawberries, had to freeze it for 5 or 6 min , so the sushi matress can come up out of it , then just put the rolls back in the fridge.


So I am really proud of my balsamic vinegar -BV- reduction with a raspberry flavor , I bought at a discount store a bottle of this BV , then with fresh berries that I blended , I boiled it down in medium heat for about 2 hours , making sure stirring every 10 minutes ... the flavor is strong and overwhelming , but in small doses is a nice touch ... I did not use a single ounce of sugar to make this ... and I was so surprised of how simple , yet tasty this was!


The guava pearls were made out of guava paste that I had made into small pearls and then rolled in confectionate sugar and freeze it .... that simple , yet tasty!
