6TH COURSE: MAIN ENTREE


I wasnt as happy with this dish , as I was with my other dishes. I guess I was just creatively tired and just wanted to get over with !


This is a oven roasted steak, rubbed with fajita seasoning and served with three sauces: chipotle-papaya , tomatillo pesto and spicy garlic , seating on a bed of sauteed mushroom/onions/bell peppers .


The chipotle papaya sauce it was made with a full papaya , honey , garlic , salt , onion powder , ginger powder and ONLY one chipotle pepper, it's quite tasty and spicy! one chipotle pepper goes a long way!


The tomatillo pesto was made with a hint of sour cream , tomatillo , cilantro , olive oil , 1 egg white , salt , onion powder and a hint of curry .


The spicy garlic is a family recipe and my Aunt will kill me if she knows that I have give this info !!! I can give you all but one ingredient : one jalapeno , 3 tomatoes , half of a white onion

and as much garlic as you want! I usually add one or two litte pieces of it ... salt as desired .
