COMIDA CORRIDA -EATING IN A RUSH-

The three following dishes , are pretty much my take in a mexican tradition called "Comida Corrida" -translated roughly as Eating In A Rush- , in mexican fondas -small family owned eateries- they serve for a modest price , 3 dishes , usually soup , main entree with rice and beans and dessert , during lunch hours . Whats so especial about "Comida Corrida" , is the display of imagination and modesty of ingredients , most of the dishes are family recipes and usually the whole operation of the bussines is run by mom-and-daughter , a typical Fonda only opens from monday thru friday , from 11am thru 3pm , offers 2 options of each course and will set you for less than 4 dlls. My reintrerpretation of "Comida Corrida" includes Carrot Soup , Pork Ribs in Dark Mole Sauce and Strawberry-chocolate flan .
