HOME MADE PINEAPPLE JELLY AND SWEET BASIL CHIFFONADE MINI CUPCAKES
So this is my first baking experience , is a small cupcake vanilla flavored , with homemade pineapple jelly and fresh sweet basil chiffonade ... the texture of the cake was like "angel food" , very puffy and soft ... everyone at work loved it ;) I made like 30 small cupcakes -the size of a quarter coin-.
I made the jelly by blending the contents of a can of pineapple with some sugar , no juice at all , then I cooked low heat with some lemon , hint of salt and 3 tbsp of sugars.
The combination of pineapple and sweet basil sounds odd , but it does work very well , it has a fresh , yet sexy flavor .
