Fish Mini Cakes served with mixed dry veggies and a spicy tomato-thyme sauce
The fish mini cakes are a mix of catfish and whitebass , chopped up , mixed with roasted bell peppers , corn , fresh onion , egg and breadcrumbs . The spicy tomato-thyme sauce is made with fresh tomatoes , fresh thyme , chicken stock , garlic , salt , ginger , orange juice and deep fried habanero peppers . The dry veggies were bought at the local market .
